For the roasted vegetables with honey and balsamic, peel the root vegetables and cut them into quarters lengthwise. Peel the onion and cut it into thin slices.

Preheat the oven to 200°C, mix the vegetables with the rest of the ingredients and place them on a baking tray covered with baking paper. Season with salt and pepper and roast in the oven for about 20 to 25 minutes until soft.

Serve the roasted vegetables with honey and balsamic with fresh pita bread or as a side dish.
