Instructions:

(*) For a cake pan (quiche mold) of about 22 cm in length, should offer for 6 to 8 people.

Spread the pie dish (quiche dish) with cling film, this works best if you wet the film on one side with water.

Beat the egg yolks and sugar (1) to a light, thick cream, this will take eight to ten min.

Whip the cream until stiff.

Beat the egg whites until creamy. Then spoon in the sugar (2) and continue beating until you have a glossy, snow-white mixture.

Stir the lime zest and juice into the egg yolk cream. Stir in the cream first, then the snow. Pour the mixture into the prepared mold and freeze for at least four hours.

Remove the peel from the mango and cut the pulp from the stone. Mash with the lime juice and the powdered sugar. Refrigerate.

To serve, turn the lime parfait out of the mold, cut into slices, arrange on plates and pour mango sauce around.
