Stir the mustard powder with vinegar, wine and crème fraîche until smooth. Add a little more flavor with salt and sugar.

Just before serving, pluck the dill leaves from the stems and stir them finely chopped into the sauce.

The sauce goes well with cold game (saddle of venison), roast beef and cold chicken.
