Preheat oven to 110 °C hot air.

Beat egg whites with a pinch of salt until stiff. Mix sugar and vanilla sugar and gradually add to the beaten egg whites and continue beating until stiff.

Keep a small part of the mixture for decorating the cookies. Add the almonds and hazelnuts to the remaining part. Form small balls. Wet your hands with cold water to prevent the dough from sticking.

Place on a baking sheet lined with parchment paper. Use a piping bag to pipe the remaining snow onto the balls.

Place a whole hazelnut in each of the snow. Bake the almond balls in the oven for about 30 minutes.
