Mix flour with eggs and milk until smooth. Cut the ham into fine strips. For each pancake, cross-fry a little of the ham in a frying pan with a little butter, then pour a little of the batter over it. Bake the pancake on both sides until golden brown. Pannekoken met Pillewoermern is best served with a leaf salad.

This dish is said to have been requested for the first time by the Westphalian baron Alfred von Renesse in Münster from the landlady of the famous restaurant “Pinkus Müller”. His intention: He wanted to make fun of the landlady, because the Westphalian “Pillewoermer” actually means “earthworms” translated into High German. The good woman did not let herself be fooled and served the baron only strips of ham, which, however, look very similar to earthworms.
