For the rice Trauttmannsdorf bring milk to a boil, add rice pudding and sugar and let the rice swell at low heat in about 30 minutes and then cool.

Mix curd cheese and vanilla sugar into the rice. Cut fruit into small pieces if necessary, add to rice with lemon juice and rum.

Whip the cream until stiff, fold into the rice and chill the Trauttmannsdorf rice until ready to serve.
