For the parsley potatoes:

For the Wiener Schnitzel, pound the schnitzels and salt them. Coat the schnitzel in flour, egg and breadcrumbs. Fry in the fat.

For the parsley potatoes, wash the potatoes and boil in salted water until soft, about 20 minutes. Strain potatoes, peel and cut into quarters.

Heat butter in a pan and fry potatoes in it until crispy. Sprinkle parsley on top and season with salt and pepper.

Arrange the Wiener Schnitzel with the parsley potatoes and serve.
