For the rice pudding with vanilla sauce, boil the milk with powdered sugar. Add the round grain rice and simmer on low heat for about 20 minutes until the rice has absorbed the milk.
For the vanilla sauce, cut open the vanilla pod and scrape out the pulp. Bring milk, vanilla bean and vanilla pulp to a boil. Mix yolks with powdered sugar until smooth.
As soon as milk boils, remove milk from plate and remove vanilla bean. Stir yolk-dusted sugar mixture into milk but do not bring to a boil (otherwise yolk will curdle).
Stir until a thick cream is formed. Arrange the finished rice pudding on plates and pour vanilla sauce over it. Serve the rice pudding with vanilla sauce.
