Rinse the lemon, wipe dry and roughly grate the zest. Place the grated rind on a plate and set aside. Squeeze the lemon.

For the marinade, mix half of the lemon juice with sugar, salt, water and a tiny bit of freshly ground white pepper. Later, add the oil in detail.

Clean and rinse the mushrooms and the zucchini. Finely slice the mushrooms, turn them briefly in the vinaigrette to the other side. Halve the zucchini lengthwise and also cut into thin slices.

Clean lettuce leaves, rinse briefly and drain well, then pluck into bite-sized pieces. Also turn to the other side in the marinade. Drain a little and spread out two cocktail glasses with it.

Cut salmon into strips, mix with mushrooms and zucchini slices, fill into the glasses lined with lettuce leaves.

Pour the whipped cream into a suitable bowl and whip with a hand whisk until light and creamy. Fold in the horseradish, season with the juice of one lemon, pepper, salt and a tiny bit of sugar.

Spread the horseradish whipped cream evenly over the cocktail and garnish with the lemon shavings. Serve immediately.
