Paprika Bacon

For the bell pepper bacon, remove the rind from the back bacon and cut the bacon into rectangular strips. Rub with salt and dry in a dish. Sprinkle plenty of salt between the bacon slices. (Fatty bacon will only absorb as much salt as it needs).

If the bacon is thin, mix paprika powder with warm water to a thick paste after only 14 days and brush the bacon with it.

Then hang the parpic bacon in a cool, dry place.
