For the quince applesauce, grate and cut quinces. You have to cut away the core and the peels. Bring the apple juice, grated lime zest and lime juice to a boil in a pot and add the quince pieces.

Cover and simmer gently for about 15 minutes. Then add the peeled, cored apples and simmer until all the fruit pieces are soft.

Puree the mixture with a blender and add as much honey as you like.
