For the pyre, coat a baking dish with melted butter and half of the grated nuts.
Mix the milk with the yolks, honey, rum and lemon zest. Dip the white bread and line the mold with it.
Mix the sliced apples with sugar, remaining nuts, cinnamon and raisins.
Now alternate the white bread and apples twice and finally pour the remaining milk over them.
Bake the pile in the oven preheated to 180° C for about 30 minutes.
In the meantime, prepare a snow cover. Beat the egg whites to snow and then beat in the sugar. Put the snow cover on the pile and bake it for another 10 minutes in the oven.
Remove the finished pile from the oven and serve hot.
