For the currant cake with snow hood, beat the sugar, yolks and vanilla sugar until fluffy. Gradually stir in the melted butter.

Mix flour and baking powder and add with the milk and mix well. Spread the mixture on a baking tray and bake at 170°C convection oven for about 10 minutes.

In the meantime, beat the egg whites and stir in the sugar and vanilla sugar. Fold in the currant and spread on the cake.

Reduce the temperature to 150°C and bake at top and bottom heat for about 20 minutes until the snow is a little brown.

Allow the currant cake with snow to cool slightly and serve.
