For the apple cream with brittle, first steam the apple pieces in a little water until they are soft. Then drain them in a sieve.
Now mix banana juice and cinnamon with the apples and puree until creamy.
Carefully caramelize maple syrup in a non-stick pan and add almonds and hazelnuts.
Spread the warm mixture thinly on a baking tray covered with baking paper and allow to cool well.
Now break the cooled brittle into small pieces, fill the apple cream into bowls and garnish with the brittle.
