Preheat oven to 200 °C and peel, quarter, core and roughly dice apples.

Mix the spices and rub the roast all over with them. Heat light butter in a roasting pan, place the roast with the pork rind facing upwards, brown, surround with the apple pieces and lemon strips, pour on water and cider and roast the whole thing with the lid closed in the stove for two hours – the last half an hour open for a crispy crust. Remove the roast and keep it warm in the oven.

Strain the meat juices, thicken with sauce powder, refine with whipped cream and Calvados, perhaps season a little and serve with the roast cut into slices on a rustic wooden board.

Serving : potato dumplings, broccoli vegetables and Vogerlsalat Drink : chilled pilsner or apple cider spritzer
