For the Mediterranean rice salad, first put the rice in 2 cups of water with the bouillon cube and let it boil.

Dice the onion and garlic and fry them in a pan. Cut the melanzani into small pieces and fry them. Cut the mozzarella into small pieces and quarter the tomatoes.

When the rice has cooled, mix all the ingredients and season the Mediterranean rice salad with salt, pepper and fresh basil.
