For those who love strawberries:

Whip cream with vanilla bean and granulated sugar, cool, then mix in the softened gelatin and egg yolks and pour into molds. Cool for one night! Remove hulls from strawberries, rinse and cut into quarters and toss in a baking bowl with 3 tbsp sugar and 3 tbsp young balsamic vinegar until sugar dissolves. Turn out the panna cotta and serve with the strawberries and garnish with mint and powdered sugar.
