For the Mediterranean chicken leg, first prepare the marinade. Mix lemon juice with olive oil and spices and season to taste.
Wash the chicken legs, pat dry and brush with the marinade. Place in a roasting pan or a slightly deeper baking tray. Roast for about 40 minutes at 160 degrees.
In the meantime, wash the vegetables, peel the onion and roughly dice everything. After 40 minutes, add to the chicken legs and roast the Mediterranean chicken leg for another 20 minutes.
