Instructions:

In a large frying pan, sauté shallots and bacon in butter until shallots are golden. Season the veal chops with salt and pepper, dust with flour and place on top of the shallots. Roast at 150 °C in the kitchen stove, turning several times, until brown. After 45 minutes, remove the cooked chops and keep warm. Degrease the gravy, add wine and cook a little bit. Remove the pan from the stove and thicken the sauce with the egg yolk. Before serving, sprinkle the chops with the chopped herbs and drizzle with vinegar. Offer the sauce separately.
