Instructions:

For the Grilled St. Peter’s Fish on Shrimp Jus with Lime Butter, first, for the jus, in a large saucepan, brown 2 tablespoons of butter.

Add four chopped raw king prawns and diced shallots and sauté. Season with capers, garlic, thyme, saffron, sage, turmeric, salt and pepper.

After briefly sautéing, deglaze with crustacean stock and wine and reduce to one third. Then fill up with veal jus and add basil and coriander.

Grill the fish. Mix the butter well with lime juice and zest. Serve grilled St. Peter’s fish on shrimp jus with lime butter.
