For the walnut heather sand, knead a shortcrust dough from sugar, butter, spelt flour, yolks, nuts with the salt and the cinnamon. Form the dough into two thick rolls, wrap the rolls in plastic wrap and place in the refrigerator.

After 2 hours, peel the rolls from the plastic wrap. In the egg white lightly beaten with a fork with 1 tablespoon of water, turn the rolls and sprinkle with granulated sugar.

Cut into slices about 5 mm thick and place on a baking tray lined with baking paper.

Bake the walnut heather sand at 180 °C for about 10 minutes, checking repeatedly during the baking process that the cookies do not become too dark.
