Clean and rinse peppers and cherry tomatoes. Remove seeds from peppers, cut into coarse pieces. Drain bamboo shoots, lychees and mangos, reserving fruit juices. Mix soy sauce, oil, sambal, honey, sherry oil and 1 tablespoon each of the lychee and mango juices to make a marinade. Marinate the fruit and vegetables for about half an hour, then alternate them on skewers.
