Try this delicious noodle dish:

Germination time of mung beans: 4 days Total preparation time: about 40 min.

1. put the mung beans in a jar, cover with warm water and let it boil for half an hour. Close the jar with gauze and a tight-fitting rubber band and invert in the sink to allow the water to drain. Place the jar in a warm, bright place and cover the bean seeds with warm water every day, stand for a few min and drain.

Remove the skin from the onion, chop it and fry it in hot oil at medium temperature until transparent. Add the sprouts and the crème fraîche, bring to the boil once and cook for about 5 minutes at low temperature with the lid on.

Mix the sprouts with salt, pepper, the juice of one lemon and the cheese and keep warm with the lid closed.

Cut the tomatoes into cubes. Rinse the chives, pat them dry and cut them into fine rolls.
