Instructions:

For the dandelion honey, bring the flowers and lemon slices to the boil together with the water. Boil on low heat for 20 minutes. Strain through a fine sieve.

Boil juice and sugar on low flame until the liquid is of honey-like consistency.

The honey will keep for over a year when cooled, stored in a dark, dry place.

For the semi-frozen, heat dandelion flower honey and bee honey. Add to the egg yolk form while stirring vigorously. Stir until the mixture is cooled and viscous. Fold in the stiffly whipped cream at the beginning and the egg whites whipped with the sugar at the end. Pour the parfait mixture into portion molds or possibly into an ice cream container and place in the freezer until firm. Freezing time: 4-5 hours.
