In the faring, butter, sugar and yolks are driven off until creamy and the grated lemon zest is stirred in. Baking powder is mixed well with the flour and alternately with the milk is added and mixed well until a not too firm dough is formed. Divide the dough into two halves.

In one half, add the cocoa, previously mixed with a tablespoon of water. Pour the white and the dark mixture alternately into the greased and dusted pan. Bake at a moderate temperature.
