For the curd strudel, prepare strudel dough according to instructions. Separate eggs. Beat egg whites until stiff. Cream butter until fluffy, add sugar, lemon zest and juice, vanilla sugar, egg yolks and sour cream.

Fold in curd cheese, beaten egg whites and raisins. Preheat oven to 180 °C. Spread two thirds of the strudel dough with the filling, fold in the edges and roll up loosely to form a strudel.

Place on a greased baking tray or in a greased pan, brush with melted butter and bake the strudel for 45 minutes.
