For the blackberry and curd strudel, mix curd, yolks, sugar, vanilla sugar, lemon zest, custard powder and butter. Beat egg whites until stiff and fold in.

Mix blackberries with sugar. Spread strudel dough and brush between sheets with melted butter. Spread half of the curd on top and add half of the blackberries.

Carefully roll up and place on a baking tray lined with baking paper. Do the same with the second dough.

Brush the blackberry and curd strudel with butter and bake in a preheated oven at 180 °C until golden brown.
