For the chocolate cherry pudding, put a few tablespoons of the 500 ml cherry juice in a measuring cup, bring the remaining juice to a boil.

To the juice in the measuring cup, add the chocolate pudding powder and sugar and whisk until smooth.

When the cherry juice boils, reduce the heat slightly and whisk in the mixture from the measuring cup until the pudding thickens slightly – about 2 minutes.

Pour into 4 small bowls and chill.
