For the red fried potatoes, wash the potatoes. Then boil the red potatoes in salted water for about 20 minutes until almost done.
Heat olive oil in a pan, cut the red potatoes in half and fry them in the olive oil. Just before the end, add the thyme sprigs so they don’t burn.
When the red potatoes are done frying, arrange them on warmed plates and sprinkle with coarse sea salt.
