Instructions:

Preheat the oven to 170-180°C. Cream together the butter, sour cream, sugar, egg yolks and lemon zest until light and fluffy. Add the softened QimiQ by the spoonful. Stir in the toast and starch. Beat the egg whites with the sugar until stiff and fold in. Prepare the dough as indicated on the package.butter a sheet of strudel dough, spread 1/4 of the mixture on it and roll it up. Make 4 strudels. Place the strudels in a greased baking dish and brush with butter. Bake in the preheated oven for approx. 30-40 minutes (cover with foil in between if necessary). Stir the QimiQ Vanilla until smooth. Add the cream and egg yolks and mix well. Brush the strudel repeatedly with this mixture during baking. Allow to rest for 20 minutes before serving and sprinkle with powdered sugar. For the raspberry vanilla foam: Blend all ingredients well with a hand blender and serve with the strudel.
