Knead the diced raw marzipan with milk, egg white and flour. Cut out spoon template from cardboard, place on a baking sheet lined with parchment paper. Pour the dough into the spoon. Bake the spoons at 180 °C for three to five minutes until golden brown.
Remove from paper while still warm, place on a coffee spoon and press lightly to flatten. When cool, remove from the spoon.
S E R V I E R – Fill mocha ice cream into cappucino cups. Beat milk with rum and sugar until creamy and pour over ice cream. Dust with cocoa, add cookie spoon.
