For the rabbit with sesame, cut the tomatoes into small pieces and fry them with 2 tbsp. olive oil in a pan for about 4 minutes. Then add the honey and cinnamon and cook, stirring constantly, until a thick mass is formed, then let it cool.

Sauté the shallots in the not too hot olive oil until they become translucent. Stir well, then add the garlic, saffron, paprika and new spices.

Now add the rabbit meat and turn well in the spices and fry. Then add the celery, carrots, thyme and sage.

Pour in the chicken soup and simmer on low heat for 1 – 1 1/2 hours, depending on the size of the meat pieces. Then add the tomatoes with honey with salt and pepper to taste and simmer for about 20 minutes more.

Roast the sesame seeds and the pine nuts in a dry pan at high temperature so that the seeds get a good color. Serve and sprinkle with the roasted seeds.
