This leaf salad got its name from the Schopen, the farmers who live around Sofia. It belongs to the very great culinary inventions, which are characterized by the fact that they achieve their flavor through a simple as well as delicious flavor composition – in this case it is the addition of the sheep cheese. The recipe for Schopsa leaf salad has been one of the most popular souvenirs from Bulgaria for years.

Remove the seeds from the peppers and cut them into small strips, dice the tomatoes and the peeled cucumber and cut the onion into very small cubes. Mix carefully and season with pepper, salt, chopped parsley, chopped dill, oil and vinegar and sprinkle with crumbled feta cheese.

For the flavor of the salad, it is best to let it sit for a while in a cool place with the lid closed (not necessarily refrigerator).

Serve: White bread or baguette
