Clean broccoli, rinse and divide into roses. Steam in a little boiling hot salted water with the lid closed for about 5 minutes until tender. Drain, reserving about 2 tbsp vegetable water. Drain broccoli and cool.

Stir through sour milk and vegetable water. Season with juice, salt, pepper and sugar. Select, rinse and drain sprouts. Rinse tomatoes and cut into wedges. Clean and rinse chicory and remove the stem wedge. Cut chicory into wide strips.

3. rinse meat, dry and cut into cubes. Heat oil in a coated frying pan. Roast meat in it for about 2 min until golden brown. Season with salt and pepper.

Extra tip: You can also sprinkle the lettuce with orange fillets. They go well with chicory and also provide vitamin C.
