Blanch (scald) goose liver, sauté onions in goose fat until soft and mash both together. Stir in egg and season well. Spread out a baking dish with the bacon slices, pour in the liver mixture and bake in the oven at 200 °C until a crust forms.

Our tip: Use a bacon with a strong flavor – this will give this dish a special touch!
