For The Chive Sauce:






Instructions:

Wrap the potatoes in aluminum foil and bake in the oven at 180 °C for 1 hour. Grease a dish with butter. Place the char fillets next to each other, brush with a little butter, cover with cling film and cook in the oven at 80 °C for about 10 minutes. The cooking time depends on the corn starch of the fish fillets. Take out and briefly reheat.

Peel the potatoes while still hot and mash them with cold butter and herbs (chives, parsley and chervil), season with salt.

For the sauce, whip the yolks with the cream and soup on the stove until creamy. Important: the sauce must not make more! Season with chives and salt.

Arrange the char on baked potatoes and pour the sauce over it.
