Clean the leek, cut in half lengthwise, rinse, drain and cut into tender strips. Cut the potatoes into cubes of about 1 cm.

Gently simmer potato cubes in vegetable soup for 20 min until soft. After 10 min add the leek strips. Then add the sour cream or crème fraiche and blend everything together in a hand mixer. Add lemon zest for a few minutes and remove repeatedly. Season finely with salt, cayenne pepper and nutmeg.

Sprinkle with parsley to serve.
