For the venison ragout in red wine-chocolate sauce, first season the meat cubes with salt and pepper, sear in oil and remove from the pot.

Fry onions, garlic, celeriac and apples in the drippings, add paradeis pulp and fry.

Deglaze with red wine, pour in game stock. Add meat, marmalade and spices and cook until tender.

Remove meat. Strain sauce and bring to a boil. Add the meat back in.

Refine with QimiQ sauce base. Finally stir in the chocolate and allow to melt. Season the venison stew in red wine and chocolate sauce if necessary.
