For the baba ganoush, wash the eggplants and pierce them frequently with a fork all around. Bake in the preheated oven at 200 degrees for about 20-30 minutes, until the eggplants respond to pressure soft.
Remove the eggplants from the oven, cut in half and scoop out the soft flesh and mash or strain with a fork.
Stir in the remaining ingredients and season to taste.
