Finely chop the garlic and puree with 3 tablespoons of olive oil.

Cut the melanzane in half lengthwise, cut the flesh crosswise and diagonally with the tip of a knife and brush with the garlic oil.

Bake on a baking sheet in the preheated oven, cut side up, at 200 °C for about 20 minutes.

Scrape the melanzane flesh out of the skin with a spoon and chop into small pieces.

Mix with lemon juice, pepper, salt, parsley, cumin, chopped chili pepper, some cinnamon powder, a pinch of sugar and the remaining olive oil.

Arrange and serve.
