For the sweet curd pineapple pancake, preheat the oven to 200 degrees. Cut off the top and bottom of the pineapple and trim off the outer brown layer.
Then divide the pineapple into 4 pieces, cut away the woody parts in the middle and cut into 1/2 cm pieces. Place the tarte flambée dough on a baking sheet.
