Innsbrucker Semmelschmarrn is not Kaiserschmarrn, but it is related to it. Because it is not only prepared very similarly. It is also served as a dessert with the same care as Kaiserschmarrn.
Cut rolls into thin slices or small cubes. Put them in a suitable bowl and season with salt. Mix eggs and milk. Pour over the top. Allow bread slices or cubes to swell for 45 minutes. Stir to form a dough. Heat butter in a frying pan in batches. Pour dough gradually into frying pan with a ladle. Fry for 3 minutes on each side until golden brown. Tear each Schmarrn into pieces with two forks. Roast for another 3 minutes. Place on warmed plates until warm. Mix sugar and cinnamon. Sprinkle over Schmarrn before serving. Bring to table hot.
