For the Charlotte Russe, beat the eggs with sugar vigorously with a mixer or whisk (until the sugar dissolves).

Add vanilla sugar and baking powder and mix again. Add the flour in portions, stirring constantly.

Mix all ingredients well. A thick (but not solid) dough should be formed.

Cut the apples lengthwise into slices about 3 mm thick. First pour 1/3 of the dough into a baking pan, then add the apples (but not all of them, set aside about 25 slices).

Fill the baking pan with the rest of the dough and place the apple slices nicely on the dough.

Place the baking dish in the oven preheated to 170 degrees and bake for about 1 hour. Remove the charlotte from the oven and let it cool.

Carefully remove the charlotte russe from the baking dish, place on a plate and decorate with powdered sugar and mandarins.
