Instructions:

Sift the flour and place in a suitable bowl. Form a hollow in the center and crumble the germ cube into it. Add a pinch of sugar and half a cup of warm water. Cover and let stand in a warm place for about 15 minutes.

Gradually add water and oil and knead into a dough (in a bowl with a wooden spoon at the beginning, then on the table with your hands). The dough should stick only slightly, but it must release well from hands and from the table. Dose water accordingly. Cover and let stand in a warm place until approximately doubled in volume (about 30 minutes).

Add the salt and knead the dough extensively one more time (don’t panic, “air” will come out).

Divide the dough into 5-6 equal parts and roll out on a bed of flour on a large baking sheet until paper-thin.

Preheat the oven to 230 °C.

Mix sour cream, yogurt and spices well.

Spread mixture evenly on the tarte flambée.

Cut bacon into cubes and spread evenly.

Remove peel from onions, cut into rings and spread evenly.

Bake in the oven on the middle shelf for 10-15 minutes.

For the sweet version, mix well yogurt, sour cream, 1 tablespoon sugar and a pinch of salt.

Peel and core apples and cut into rings. Spread apple rings evenly.

Mix 1 tablespoon sugar with cinnamon and sprinkle on top.

Bake at 225-250 °C on middle rack for 10-15 minutes.
