For the sweet and sour tofu vegetables, cut the tofu into 1 x 1 cm cubes, shallots into rings. Wash the eggplant and cut into larger cubes. Wash the tomatoes, cut them in half and remove the seeds. Peel the mango and cut into small cubes.

Heat a wok or heavy (preferably cast iron) skillet. Pour in sesame oil as well as corn oil, heat and fry tofu until golden brown. Add eggplant and mango and fry. Then add tomatoes and shallots. Season with teriyaki sauce, tamarind, salt and pepper. For the seasoning sauce, finely chop the ginger and mix in a bowl with all the ingredients. Stir into the vegetables. Toss briefly and serve the sweet and sour tofu vegetables.
