Vegetable Fried Rice with Tofu

For the fried vegetable rice with tofu, wash the rice thoroughly (up to six times!) until the water is really clear.

Put water in a pot (with insert) and cook the rice (preferably in a steamer at 100 °C) for 20 minutes.

Meanwhile, wash or clean the vegetables and cut into small cubes. Cut the tofu and shallot into small cubes as well.

Heat a pan and add sunflower and sesame oil. First sauté the shallot cubes until brown, then add the vegetables and the tofu cubes and sauté for about 2 minutes. Add the cooked rice and fry briefly as well. Season with vinegar, salt and pepper.

Arrange the fried vegetable rice with tofu in bowls and serve.
