Perhaps your new favorite bean dish:

1. cover the beans with three times the mass of water and soak for 5 hours. Drain the soaking water and rinse the beans.

Cover with fresh water, season lightly with salt and cook over medium heat until tender, 1 hour 30 minutes. Strain.

2. blanch (scald) the tomatoes with boiling hot water and peel, remove the stalk and dice the flesh. Rinse and clean the celery and cut into 5 mm thin rings.

Peel the onion, cut in half and divide into wedges. Rinse the mint and dill, pluck the leaves and dill tips. 3.

Heat the egg and sauté the celery rings and onion slices. Add the beans, stir in the bean sauce on the spot and cook the whole thing over a mild heat for 10 minutes. Fold in the diced tomatoes and remove the pan from the stove so that the vegetables do not overcook. 4.

In the meantime, cut the tofu into narrow strips of 0.5 x 4 cm edge length. Beat the eggs. Roll the wet tofu strips one by one in a little flour, in the beaten egg and in sesame seeds.

Heat the coconut oil and fry the breaded tofu on all sides until golden brown. Remove and drain on kitchen paper. Be careful: the sesame seeds fall off easily!

Place the tofu on the hot vegetables, sprinkle with the herbs and serve on the spot.
