Spread raw ham, cheese and sage evenly in chicken breasts, close with toothpicks, season.

Pour flour, egg and breadcrumbs into a deep plate each.

Turn chicken breasts in portions in flour to the other side, shake off excess flour, turn in egg, then in breadcrumbs to the other side, pressing breadcrumbs well until smooth.

Heat clarified butter in a frying pan and fry cordon bleu in portions over medium heat for about 7 minutes on each side.
