For the olive bread with oregano, put all the dry ingredients in a bowl and mix well. Drain the olives and cut them into fine rings.
Add water, olive oil and all but a tablespoon of olive rings to the dry ingredients. Knead everything together to form a homogeneous dough. Cover the dough and let it rise in a warm place for about 1 hour.
Sprinkle oregano on the work surface, place the dough on it, moisten hands a little and knead well. Form a round loaf and work the remaining olive rings into the surface of the loaf.
Cover the blank with a tea towel and let it rise again for 1 hour at room temperature. Preheat the oven to 200 degrees. Put the bread on a baking tray lined with baking paper and place it in the preheated oven.
Bake the olive bread with oregano in about 30-35 minutes at 200 degrees until golden brown. Then let cool very well on a cooling rack.
