For the eggplant spread, bake the eggplant in the oven at 200°C until the skin blisters and looks burnt (30-40 minutes). Allow eggplant to cool, peel and roughly chop.

In a bowl, puree eggplant, garlic cloves, parsley, paprika, sambal oelek and olive oil and season eggplant spread with salt and pepper.
